My favorite is open rice pudding pie, without whipped cream. People here in Brabant put whipped cream on their pie, but it should be without.
Is it even a pie if it's made with a yeast dough or should it be called something else?

I say it is still pie. You can have graham cracker crust, flaky crust, bready crust, as long as there is some type of filling on top, and possibly a crust on top of that, it is pie. It does not even have to be round,
though that is the commonly accepted shape.
